sugar cookies - crosses

Although they can be time consuming, I love making sugar cookies for special occasions and holidays.  I love picking out cookie cutters and selecting the perfect frosting color.  I have a couple of delicious sugar cookie recipes that have been in my family for years {I’ll share those later}, but recently discovered how delicious cream cheese sugar cookies are.  You can find different recipes {here} or {here} and I also shared one of my favorite versions below…

Cream Cheese Sugar Cookies

1 cup sugar

1 cup butter, softened

3 oz. cream cheese, softened

1/2 tsp. salt

1 tsp. vanilla

1 egg yolk

2 cups all purpose flour

Optional: frosting {recipe below}

In a large bowl beat all ingredients except the flour and frosting until light and fluffy {about three minutes}.  Add the two cups of flour and mix well.  Cover and refrigerate for one to two hours.

Heat the oven to 375 F.  Roll out the dough to desired thickness {about 1/8″} on a floured surface.  Cut the dough with cookie cutters and place about 1 inch apart on an ungreased cookie sheet.  Bake at 375 F for 6-10 minutes  or until lightly browned.  Cool about two minutes, then remove from cookie sheets and cool completely before frosting.
